Flourless sweet potato brownies

invisible-lioness.com

First, a word of warning. If you don't usually eat  low-sugar stuff, these brownies might taste "healthy" to you.  You can help that by using dates instead of banana.

Ok? Let’s get started!

The ingredients:

01 1/2 cup cooked sweet potato (120g)

02 1/2 cup nut butter (130g)

03 11 large egg + half a ripe banana (or 60 g of dates)

04 60ml of coconut milk + 20g of unsweetened cocoa powder

Yeast Package
Jar
Dough
Tomatoes

– 2 tsp vanilla extract – 1/2 tsp baking soda – dash of cinnamon

"Cook" the sweet potato

01

Pop the sweet potato into the microwave for 2 cycles á 2 minutes each on high setting. Turn the sweet potato in between cycles.

Preheat the oven

02

Let the sweet potato cool while you preheat the oven to 175 degrees (350 F). You want it to be hot when you put the brownies in!

Mixing time

03

Throw all the other ingredients in a bowl. Break the banana or dates into smaller pieces. Add the sweet potato once cooled. Blend well.

Aaand, bake it!

Pop your brownies in the oven for at least 20 minutes. Do the toothpick test to figure out if they're done.
